SPINASIE, SAMPIOEN,SPEK EN FETA QUICHE

SPINASIE, SAMPIOEN,SPEK EN FETA QUICHE

Kors:
240 g Koekmeel
230 g Botter
150 g Cheddar kaas

Vulsel:
500g Spinasie
45 ml olie
250 g Spek
1 groot Ui
1 Knoffelhuisie
300 g Sampioene
Sout, peper en aromat
100 g Gerasperde cheddarkaas

Bolaag:
3 Eiers
150g Korrelrige maaskaas
100 ml Melk
1 wiel Feta
Meng al die bestandele met ‘n voedselverwerker totdat dit ‘n deeg vorm. Gebruik dan ‘n koekpan met ‘n los boom en smeer die kante en die boom met die deeg. Laat staan in die yskas vir 15min.
Soteer die spek, uie, sampioene en knoffel in olie tot gaar. Kook die spinasie en voeg by die gaar spekmengsel. Laat dit vir 5min kook. Voeg al die speserye by. Skep mengsel eweredig in pan. Strooi gerasperde kaas oor.
Klits al die bolaag se bestandele behalwe die feta. Giet die mengsel oor die spinasie. Frimmel dan die feta kaas oor.
Bak vir sowat 40min in die oond by 180oC.
Bedien warm of koud saam met net ‘n lekker mengel slaai

mini omelette with tasty basil pesto layers :)

This is a very easy tasty lunch to make for the more healthier enthusiast which does not like to eat starch and bread all that much , like my husband , this is a recipe I made especially for him , and it is so tasty

two egg mini omelette with layers of basil pesto, if you want the recipe do ask , easy peasy to make and layers of lean ham and of course an always winner  cherry tomatoes :) you can make the layers as a stack with more layers , but this was just a smallish lunch :)

I would say for bread lovers this would go very well with some rye bread that was toasted :)

mash potatoes which is yummylicious

Try adding 1/2 teaspoon baking powder to the potatoes, milk, and butter. Let it sit a few minutes before serving. 
sometimes if I have a lot of people I cook for I add a whole teaspoon , and then mix and then put it in the microwave for a minute and it is so fluffy and nom nom 

my friend Teresa Goddard tried this and she said she will never make it any other way , she is one of my biggest supporters :) 

Basil Pesto potatoes

This is so yummy I just had to share this recipe , nom nom potatoes

par boil potatoes but do keep the skin on and slice in thin but not to thin slices , the skin is so much tastier in this recipe and it really is good for you and no mess no fuss .

then put them in a oven proof dish that was rubbed with butter

Add the pesto over the potatoes and then add the pesto sauce and then the parmesan and then the depitted olives and add little knobs of butter inbetween as well , salt and pepper to taste .

grate a little bit of fat free Edam cheese or any chedder over the top and then bake in the oven till it looks okay to eat 
this is when it comes out of the oven , oh my it was so yummy 


I made chicken breasts with it with a green salad , was so good and the onions is baby pickled onions which I just soaked in a bit of white vinegar and salt after I cut them into thin slices and circles , after a while they are so good with this plate of food as they taste just like pickled onions , oh my , tasty

killer meatballs

Incredible Baked Meatballs. 1lb minced meat, 2 eggs, beaten with 1/2 cup milk, 1/2 cup grated Parmesan , 1 cupbread crumbs, 1 small onion, minced, 2 cloves garlic, minced, 1/2 teaspoon oregano, 1 teaspoon salt, freshly ground pepper to taste, 1/4 cup minced fresh basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.
