mommy's tuna roll

sorry for the delay you guys, this is my mom in law's recipe and I did a video on youtube about this and me and my friend Rochelle Mezzano made it while we were facetiming and it was so much fun cooking and baking together , my mom in law which is my mom I love her with all my heart and she is the only mother I know now , I look up to her and I thank God each day for such a wonderful woman in my life, it is the first time ever that I see a mom in law treat her daugter in law like her own daughter, I also love that she calls me her sunshine child , it makes my heart feel warm and fuzzy inside, I also have the most awesome father in law, Pa Johann always makes me smile with his long text messages , love the way he writes in Afrikaans . anyway here is the recipe , sorry that I took so long to put this up , will upload the photos later though . Tuna roll first boil two eggs , you can make this in a double recipe too as it is nom nom tasty. Dough 500 ml flour , which is two cups flour 10 ml salt 5ml sugar, 10 ml baking powder   125g chedder cheese , I just took three quarter cup 125ml oil 125ml milk filling two boiled eggs chopped one tin tuna with water , I used the one in the oil and it also came out nice , throw out oil or water 15ml chopped onion salt and pepper to taste 30 ml mayonaise 180 degrees or 350 F for twenty minutes to golden brown :) sift the dry ingredients mix cheese with flour then mix oil and milk together and mix with the flour by taking a knife and cutting oil milk into the flour till dough form , do not overmix roll out and form longish square mix chopped egg tuna mayonaise and onion together with pinch of salt paste all of the ingredients in the middle of the tuna roll , fold close and then take a knife and make cuts into the pastry but not right through,take two egglifters and place into a baking tray that was buttered so that it does not stick to the pan , bake until golden brown , enjoy with tomato and letucce and onion salad and try it with ketchup or tomato sauce , eat hot or cold , it is very tasty .

Dellies recipe :)



 Ingredients /Bestanddele: 2 cups of flour / 2 koppies koekmeel
 5 teaspoons of sugar /25ml suiker
 2 teaspoons of bakingpowder /10ml bakpoeier
 half teaspoon salt / 2ml sout
 2 eggs /2 eiers
 250 ml boiled water /250ml kookwater
 oil for frying /olie vir vlakbraai

sift all the dry ingredients g/ mix eggs and water together with a fork mix egg mix into dry take spoon fulls to the oil , fry both side till golden brown drain on kitchen towels make curry mince :)
 Sif droeë bestanddele saam. Klits eiers en kookwater saam. Meng eiermengsel met meelmengsel. Skep lepelsvol in warm, vlak olie en braai tot goudbruin. Dreineer op kombuispapier. Bedien met maalvleis vulsel.

 Fry onion that was chopped in small blocks, add little bit garlic then two spoons of curry to taste , fry and then add blocks of potatoe and carrot circles and then add lean mince with a two spoons of worcestersauce and one tomato that is chopped without the skin , add two teaspoons chutney to taste mmm black pepper and salt , mmm nice

Becky's mom in laws pie !

Filling - Combine 1 to 3 cups of cooked chicken; chopped up
 - 1 cup chicken stock -
1 can cream of chicken soup -
1 can cream of mushroom ( I used cream of celery as it is all I had on hand) and 3 hard boiled eggs; chopped and if you want some mixed vegetables. Pour into casserole dish.
TOPPING - 1 stick melted butter or margarine - 1 cup self-rising flour - 1 teaspoon baking powder and 1 cup milk. Pour over casserole (batter will be very thin) and bake at 350*F   180 degrees if you are in South Africa like me hehehe for 45 minutes. Topping will be crisp and golden brown when ready.

home made veggy patties and veggie soup

smash potato, parsley , spice and carrot and roll in battered egg and then flour and fry in olive oil till golden brown , remember to add spice and salt and pepper to taste to mashed veggies before hand , any veggies can be used, I use the veggies as natural as it comes, it makes it healthier

one beef block , broccoli , onion carrots , mealie kernels , beans and some soup mix which and lentils in and cook for a few hours and it makes an awesome minestrone soup, I sometimes even add green sweet pepper and other veggies too, it is really very tasty and so wholesome xxx yummy

carrot muffins

Carrot Muffins Recipe:

I do not put in any nuts as it is really very expensive for me but you are more than welcome to put some in, I also do not use the frosting :)


1/4 cup (60 ml) pecans or walnuts
1 1/3 cups (320 ml) grated raw carrot (about 2-3 peeled carrots)
1 small apple, peeled and grated ( I put in the skin also as I do not see why I shouldn't ) and it is still very yummy
1 1/3 cups (175 grams) flour
3/4 cup (150 grams) granulated white sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup (120 ml) coconut (sweetened or unsweetened) (optional)  I do not have a lot of coconut due to me making those oats cookies for husband hehe
2 large eggs
1/2 cup (120 ml)  vegetable, or canola oil
1/2 teaspoon pure vanilla essence

Cream Cheese Frosting: (optional)
1/4 cup (56 grams) unsalted butter, room temperature
4 ounces (1/2 cup) (110 grams) cream cheese, room temperature
3 tablespoons confectioners' (powdered or icing) sugar
1/2 teaspoon pure vanilla essence


when they cooled off I put mine in the fridge in a bowl, it keeps it moist texture and so so yummy with tea

Valentines dinner


lemon and rosemary chicken breast with boiled potato with fresh herbs on and Greek salad with Télana van der Merwe's butternut salad which is fine grated butternut with pineapple crush and peach jelly , was so nom nom

Estelle .... tea scones








 this recipe I got from my sister in law and it never flop :)
500 ml cake flour
15ml bakingpowder
2ml salt
50ml butter
1 egg beaten< One abused egg *giggles*
125 ml milk
25ml sugar

Sift the dry ingredients , except the sugar , together and rub in the butter
beat the egg and milk and sugar together and cut into the dry ingredients mixing only to moisten
roll out 15 to 20 mm thick and cut with a knife or cookie cutter, I used a glass :)

bake in the oven (220celcius) for 10 - 15minutes

spread on butter when cooled off , Jam and cheese , enjoy !

Maru's oats cookies

I just dished them into cupcake holder thingys as I did not have wax paper
Maru se Sjokolade-hawermoutkoekies

250ml botter/butter
500ml suiker/sugar
125ml melk/milk
125ml kakao
750ml hawermout/oats
250ml klapper/coconut
5ml vanieljegeursel/vanilla essence

1. Meng hawermout & klapper. mix the oats and coconut
2. Plaas botter, suiker, melk & kakao in kastrol./ place butter , sugar, milk and cacao in pot
3. Kook vir 5 minute vandat dit begin kook.maar gaan na laer hitte /bring it to boil, turn off the stove, stir for further 5 minutes to dissolve the sugar

4. Verwyder van hitte & voeg hawermoutmengsel & vanielje by. / take off heat and put admixture in
5. Skep lepelsvol op waspapier en laat koud word./ dish up on waxpaper , spoonful and let it cool off

Indien te styf, kan bietjie melk bygevoeg word./if to stiff you can add small amount of milk

meditaranian chicken with quinoa

yes Quinoa is a protein also but with my husband being so fit and all, and he takes food for lunch the following day also I just thought out this awesome recipe
two teaspoons of sweet chilly sauce , as husband likes it
2 teaspoons of olive oil to fry onions and chicken etc
half a sweet red pepper
hand full of fresh parsley
three chopped garlic pieces
one and a half spoon tomato puree
salt and pepper to taste
5o ml of milk right at the end
a pinch of ginger fresh if you have
robertsons wet paprika , if you only have dry a teaspoon then
a teaspoon balsamic vinegar reduction
a jalapeno chilly chopped finely
a pinch of curry powder , it really enhances the flavors
chopped large onion,
two to three chicken breasts
 one cup of quinoa ,cook as you would normal prepare it1cup to 1and a half cup of water, bring to boil and simmer for 20 minutes  ,








husband loved it although with the chopped jalapeno it was a bit to hot for him but he said it was spicy and tasty and nom nom

Chicken pie

1 today puff pastry roll , makes 6 huge pies

three chicken breasts no skin no bone :) , cut them in bite size pieces , and it makes it easier to fry .

one and a half teaspoon Ina Paar-man's lemon and Rosemary herbs
salt and pepper to taste
half teaspoon cake flour
garlic chopped one teaspoon
Ina Paar-man's beef stock , one teaspoon
one large carrot sliced in circles
table spoon olive oil
two smallish  potato cut in small blocks
one large onion cut in small blocks
one teaspoon paprika
one teaspoon beef spice
half cup water
quarter cup of milk to brush the pies before they go into the oven 

Roll out the dough , take biggish tea saucer and cut out pastry

fry onion and small blocks of potato and carrots that is thinly sliced and fry in olive oil 

after you have cut the chicken in bite-size pieces fry along with the carrots and onions adding  pepper and spices

add then the paprika, the paprika makes the chicken meat a nice rich color and the pie is not so dull then

fry till nice and golden and veggies and onions are nice and brown

I added a bit of pink salt as it is much nicer and tastier , and healthier

beef stock with chicken is so delicious , trust me with the rosemary and lime spice it compliments the chicken , add the water after that

the glass bowl has been rubbed with butter , dish up some in the one half of the circle of dough and then close


take a fork and press down so that the filling does not bake out , remember to make a whole with a knife on the top for steam to escape . brush milk all over the top to make it nice and brown and it wont bake to dry .

bake until nice and golden and ready to eat , husband said it was very very tasty , I made him a green salad with tomato with it .

chicken tikka pizza

 This is my own recipe that I thought out , You have to take two chicken breasts , take all the bones and skin off and then you have to make a special sauce and marinade the breasts in it for a while .
Two chicken breasts
bag of tomato puree
two teaspoons of garlic
one teaspoon of paprika paste
pinch of salt
pinch of pepper
two spoons of Worcester sauce
one teaspoon normal curry powder
one teaspoon of gar-am salaam < my own special mix of spices and curry , with bay leaves , turmeric, cinnamon and five spice etc
half  teaspoon of brown sugar 
half spoon dry paprika , I also used Robertson wet paprika a teaspoon of that
mix all together and underneath this photo shows how dark the   chicken becomes and you will not believe it when you fry it , the chicken still stay most inside , and so tasty !

After it is cooked and cooled off a bit , take the kitchen scissors and cut chicken into strips

place the chicken on-top of the tomato pureed pizza base and then rings of sweet peppers and then rings of sweet bell peppers ,cut three cherry tomato's for the top , 180 degrees,  put in oven for 15 to 20 minutes and it is ready to eat, my husband said it was very yummy :)


home made pesto sauce

wash fresh basil leaves 





basil leaves, pine nuts , virgin olive oil , lemon juice , black pepper, pine nuts , garlic chopped fine , mix it all in the blender 


delicious and such a lovely color 
had boiled potato for lunch on Friday and then added some pesto sauce with it , mmm was so delicious , it is very nice with pasta

cottage pie / Sheppards pie



cook some potatoes and take skin off
                                          
have to make a nice saucy mince with lean mince, carrot , some potato blocks,peas , onion and some beef spices , remember to fry onions and meat first and then spices and then carrots etc                                  






add one teaspoon of butter in the mix and mash the potato and then take one eggyolk and mix in together with the potato, that's why it is so yellow , I got this tip from Gordon Ramsey , it bakes a lovely color .       











 



           
put the meat into an oven dish and cover the top with the potato smash 
Bake until golden brown and serve with tomato and onion salad

yogurt Avo salad

mix avocado and low fat yogurt together and then add tomato , baby spinach and cucumber and stuffed olives on top , mmmm you can eat this with chicken or with fish, the mixture of avo and low fat yogurt will be spiced with Ina paarman's lemon and black pepper

Omelettes for dinner This

This omelette I made for husband with stuffed veggies like mushroom yellow and red sweet pepper , fresh baby spinach , tomato and stuffed ollives and two kinds of cheese , one was cheddar and the other was a non fat one Edam cheese which is healthy for diabetics too , this is so healthy and wholesome due to the fact that he gets to eat a lot of veggies and it is tasty too :)
This omelette was with zucchini and sweet peppers and beans and mangetouts, carrot  and husband  loved it , I did not use a lot of cheese with this one :) it was only two eggs that made this huge omelette, the secret is to take one half shell and add a bit of water to the egg mix it makes it fluffy and light :) remember pinch of salt and white pepper :)
