carrot muffins

Carrot Muffins Recipe:

I do not put in any nuts as it is really very expensive for me but you are more than welcome to put some in, I also do not use the frosting :)


1/4 cup (60 ml) pecans or walnuts
1 1/3 cups (320 ml) grated raw carrot (about 2-3 peeled carrots)
1 small apple, peeled and grated ( I put in the skin also as I do not see why I shouldn't ) and it is still very yummy
1 1/3 cups (175 grams) flour
3/4 cup (150 grams) granulated white sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup (120 ml) coconut (sweetened or unsweetened) (optional)  I do not have a lot of coconut due to me making those oats cookies for husband hehe
2 large eggs
1/2 cup (120 ml)  vegetable, or canola oil
1/2 teaspoon pure vanilla essence

Cream Cheese Frosting: (optional)
1/4 cup (56 grams) unsalted butter, room temperature
4 ounces (1/2 cup) (110 grams) cream cheese, room temperature
3 tablespoons confectioners' (powdered or icing) sugar
1/2 teaspoon pure vanilla essence


when they cooled off I put mine in the fridge in a bowl, it keeps it moist texture and so so yummy with tea

Valentines dinner


lemon and rosemary chicken breast with boiled potato with fresh herbs on and Greek salad with Télana van der Merwe's butternut salad which is fine grated butternut with pineapple crush and peach jelly , was so nom nom

Estelle .... tea scones








 this recipe I got from my sister in law and it never flop :)
500 ml cake flour
15ml bakingpowder
2ml salt
50ml butter
1 egg beaten< One abused egg *giggles*
125 ml milk
25ml sugar

Sift the dry ingredients , except the sugar , together and rub in the butter
beat the egg and milk and sugar together and cut into the dry ingredients mixing only to moisten
roll out 15 to 20 mm thick and cut with a knife or cookie cutter, I used a glass :)

bake in the oven (220celcius) for 10 - 15minutes

spread on butter when cooled off , Jam and cheese , enjoy !

Maru's oats cookies

I just dished them into cupcake holder thingys as I did not have wax paper
Maru se Sjokolade-hawermoutkoekies

250ml botter/butter
500ml suiker/sugar
125ml melk/milk
125ml kakao
750ml hawermout/oats
250ml klapper/coconut
5ml vanieljegeursel/vanilla essence

1. Meng hawermout & klapper. mix the oats and coconut
2. Plaas botter, suiker, melk & kakao in kastrol./ place butter , sugar, milk and cacao in pot
3. Kook vir 5 minute vandat dit begin kook.maar gaan na laer hitte /bring it to boil, turn off the stove, stir for further 5 minutes to dissolve the sugar

4. Verwyder van hitte & voeg hawermoutmengsel & vanielje by. / take off heat and put admixture in
5. Skep lepelsvol op waspapier en laat koud word./ dish up on waxpaper , spoonful and let it cool off

Indien te styf, kan bietjie melk bygevoeg word./if to stiff you can add small amount of milk

meditaranian chicken with quinoa

yes Quinoa is a protein also but with my husband being so fit and all, and he takes food for lunch the following day also I just thought out this awesome recipe
two teaspoons of sweet chilly sauce , as husband likes it
2 teaspoons of olive oil to fry onions and chicken etc
half a sweet red pepper
hand full of fresh parsley
three chopped garlic pieces
one and a half spoon tomato puree
salt and pepper to taste
5o ml of milk right at the end
a pinch of ginger fresh if you have
robertsons wet paprika , if you only have dry a teaspoon then
a teaspoon balsamic vinegar reduction
a jalapeno chilly chopped finely
a pinch of curry powder , it really enhances the flavors
chopped large onion,
two to three chicken breasts
 one cup of quinoa ,cook as you would normal prepare it1cup to 1and a half cup of water, bring to boil and simmer for 20 minutes  ,








husband loved it although with the chopped jalapeno it was a bit to hot for him but he said it was spicy and tasty and nom nom

Chicken pie

1 today puff pastry roll , makes 6 huge pies

three chicken breasts no skin no bone :) , cut them in bite size pieces , and it makes it easier to fry .

one and a half teaspoon Ina Paar-man's lemon and Rosemary herbs
salt and pepper to taste
half teaspoon cake flour
garlic chopped one teaspoon
Ina Paar-man's beef stock , one teaspoon
one large carrot sliced in circles
table spoon olive oil
two smallish  potato cut in small blocks
one large onion cut in small blocks
one teaspoon paprika
one teaspoon beef spice
half cup water
quarter cup of milk to brush the pies before they go into the oven 

Roll out the dough , take biggish tea saucer and cut out pastry

fry onion and small blocks of potato and carrots that is thinly sliced and fry in olive oil 

after you have cut the chicken in bite-size pieces fry along with the carrots and onions adding  pepper and spices

add then the paprika, the paprika makes the chicken meat a nice rich color and the pie is not so dull then

fry till nice and golden and veggies and onions are nice and brown

I added a bit of pink salt as it is much nicer and tastier , and healthier

beef stock with chicken is so delicious , trust me with the rosemary and lime spice it compliments the chicken , add the water after that

the glass bowl has been rubbed with butter , dish up some in the one half of the circle of dough and then close


take a fork and press down so that the filling does not bake out , remember to make a whole with a knife on the top for steam to escape . brush milk all over the top to make it nice and brown and it wont bake to dry .

bake until nice and golden and ready to eat , husband said it was very very tasty , I made him a green salad with tomato with it .
